  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 (10 oz) can enchilada sauce
  • 4 cups beef broth
  • 1 (14 oz) can diced tomatoes
  • 1 (14 oz) can black beans, rinsed and drained
  • 1 (14 oz) can corn, drained
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, green onions, tortilla chips

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium heat until cooked through. Drain excess grease.
  2. Add the diced onion and garlic to the pot, cooking until softened and fragrant, about 3 minutes.
  3. Stir in the enchilada sauce, beef broth, diced tomatoes, black beans, corn, chili powder, cumin, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes, stirring occasionally.
  5. Taste and adjust seasoning as needed.
  6. Serve hot with your choice of toppings such as shredded cheese, sour cream, green onions, or tortilla chips.
