  • 4 lbs russet potatoes, peeled and sliced
  • 1 lb ground beef
  • 1 onion, diced
  • 1 can cream of chicken soup (10 oz)
  • 1 can evaporated milk (12 oz)
  • 1/2 cup milk
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tsp onion powder
  • 4 cups shredded cheddar cheese

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, cook the ground beef and diced onion over medium heat until browned. Drain any excess fat.
  • In a separate bowl, mix together cream of chicken soup, evaporated milk, milk, salt, pepper, and onion powder.
  • Layer half of the sliced potatoes in a greased baking dish, then top with half of the cooked beef mixture. Pour half of the soup mixture over the beef, then sprinkle with 2 cups of shredded cheddar cheese.
  • Repeat the layers with the remaining ingredients.
  • Cover with foil and bake for 1 hour. Remove foil and bake for an additional 30 minutes, or until the potatoes are tender and the cheese is bubbly.
  • Let cool slightly before serving.
