  • ½ cup soy sauce
  • 2 mangos
  • 3 garlic cloves
  • ½ teaspoon fresh ginger, grated
  • 2 tablespoon water (or more as needed)
  • Cilantro for garnish

Instructions

  • Peel and dice the mangos, then blend until smooth.
  • In a bowl, mix the mango puree with soy sauce, grated garlic, and ginger.
  • Add water to the mixture as needed to achieve a saucy consistency.
  • Place the chicken thighs in a large resealable bag or a dish, and pour the marinade over the chicken. Ensure the chicken is well-coated.
  • Marinate in the refrigerator for at least 1 hour, preferably overnight.
  • Preheat the grill to medium-high heat.
  • Remove the chicken from the marinade and grill for about 6-8 minutes per side, or until the chicken reaches an internal temperature of 165°F.
