Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined

  • 2 tbsp olive oil

  • 2 tbsp lemon juice (fresh)

  • 1 tbsp lemon zest

  • 3 cloves garlic, minced

  • 1 tbsp fresh parsley, chopped

  • 1 tbsp fresh basil, chopped

  • 1 tsp dried oregano

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • Lemon wedges (for serving)

  • Skewers (soaked if wooden)

Instructions

  1. In a bowl, combine olive oil, lemon juice, lemon zest, garlic, parsley, basil, oregano, salt, and pepper.

  2. Add shrimp to marinade, toss to coat. Refrigerate for 20-30 minutes.

  3. Preheat grill to medium-high heat.

  4. Thread marinated shrimp onto skewers.

  5. Grill for 2-3 minutes per side, until pink and opaque.

  6. Serve hot with lemon wedges.

Notes

  • Soak wooden skewers in water for 30 minutes to prevent burning.

  • Can substitute lime for lemon for a different citrus twist.

  • Pairs well with rice, salad, or grilled vegetables.
