  • 10 ounces bacon slices (cut into ½-inch pieces)
  • 1 medium red onion (finely diced)
  • ⅓ cup apple cider vinegar
  • 1 tablespoon sugar (granulated)
  • 1 tablespoon Dijon mustard
  • ¼ teaspoon salt (or to taste)
  • ¼ teaspoon pepper (or to taste)
  • 2 tablespoons olive oil (extra virgin)
  • ½ cup fresh parsley (chopped)
  • ¼ cup chives (chopped)

Instructions

  • Boil potatoes until tender, about 15-20 minutes. Drain and cool slightly. Cut into bite-sized pieces.
  • Cook bacon in a large skillet over medium heat until crispy. Remove bacon and set aside, reserving drippings in the skillet.
  • Add diced onion to the skillet and cook until softened.
  • In a small bowl, whisk together apple cider vinegar, sugar, Dijon mustard, salt, and pepper.
  • Pour the vinegar mixture into the skillet with onions and stir to combine. Cook for 1-2 minutes.
  • Remove from heat and stir in olive oil.
  • Pour warm dressing over the potatoes, add bacon, parsley, and chives. Toss to coat.
  • Serve warm or at room temperature.
