  • Kosher salt
  • 1 cup all-purpose flour
  • 1 tablespoon Cajun seasoning
  • 1/2 cup milk or buttermilk
  • 1 large egg
  • 1/3 cup fine white cornmeal
  • 1/2 cup fine dry bread crumbs
  • 1/4 cup peanut, canola, or olive oil for frying

Instructions

  • Slice the green tomatoes into 1/4-inch thick rounds. Sprinkle both sides with kosher salt and set aside.
  • In a shallow dish, mix the flour with the Cajun seasoning.
  • In another dish, whisk together the milk (or buttermilk) and the egg.
  • In a third dish, combine the cornmeal and bread crumbs.
  • Dip each tomato slice first into the flour mixture, then into the milk and egg mixture, and finally into the cornmeal and bread crumb mixture, ensuring an even coating.
  • In a large skillet, heat the oil over medium heat.
  • Fry the coated tomato slices in batches until golden brown and crispy, about 2-3 minutes per side.
  • Drain on paper towels and serve hot.
