  • 4 medium green tomatoes, sliced
  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/2 cup breadcrumbs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 large eggs
  • 1/4 cup buttermilk
  • Vegetable oil for frying

Instructions

  • Slice the tomatoes into 1/4-inch thick rounds. Pat them dry with a paper towel.
  • Set up a breading station with three bowls: flour in the first, whisked eggs and buttermilk in the second, and a mixture of cornmeal, breadcrumbs, salt, pepper, and paprika in the third.
  • Dredge each tomato slice in flour, then dip into the egg mixture, and finally coat in the cornmeal-breadcrumb mix.
  • Heat vegetable oil in a large skillet over medium heat. Fry the tomato slices for 3-4 minutes per side, until golden brown.
  • Remove and drain on paper towels. Serve hot with your favorite dipping sauce.
