  • 4 large russet potatoes
  • 2 large yellow onions, thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 tsp sugar
  • 1/2 cup beef or vegetable broth
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)
  • 1 cup shredded Gruyere cheese (or mozzarella as a substitute)
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Wash and dry potatoes, then pierce with a fork. Bake for 45–50 minutes or until tender.
  2. While potatoes bake, heat olive oil and butter in a skillet over medium heat. Add onions and cook for 20–25 minutes, stirring frequently, until caramelized. Add sugar, thyme, broth, salt, and pepper, and simmer for 5 minutes.
  3. Remove baked potatoes and let them cool slightly. Slice off the tops and scoop out the flesh, leaving a thin shell.
  4. Mash the potato flesh and mix it with caramelized onions and half of the cheese. Spoon the mixture back into the potato shells.
  5. Top with remaining cheese and bake for 10 minutes or until cheese is bubbly. Garnish with parsley and serve warm.
