  • 1 packet taco seasoning
  • 1 can black beans (drained and rinsed)
  • 1 can diced tomatoes with green chilies
  • 1 cup corn (optional)
  • 2 cups shredded cheddar cheese
  • 3 cups Fritos corn chips
  • 1 cup sour cream (optional)
  • Green onions or cilantro for garnish (optional)

Instructions

  • Preheat oven to 350°F (175°C).
  • In a skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  • Add taco seasoning, black beans, diced tomatoes, and corn to the skillet. Simmer for 5-7 minutes.
  • In a baking dish, layer half of the Fritos, followed by the beef mixture. Top with shredded cheese.
