1 pound ground lamb or beef
1 medium onion, diced
2 cloves garlic, minced
4 cups mixed frozen vegetables, defrosted
10 ounces tomato soup or mushroom soup
1 teaspoon Worcestershire sauce
½ teaspoon salt
¼ teaspoon basil
⅛ teaspoon black pepper
3 cups prepared mashed potatoes
1 cup shredded cheddar cheese (optional)
Instructions
Preheat oven to 375°F (190°C).
In a large skillet, cook the ground lamb or beef over medium heat until browned. Drain excess fat.
Add the diced onion and minced garlic to the skillet, cooking until softened.
Stir in the defrosted mixed vegetables, soup (tomato or mushroom), Worcestershire sauce, salt, basil, and black pepper. Cook until heated through.
Transfer the mixture to a baking dish, spreading it evenly.
Top with prepared mashed potatoes, spreading them to cover the meat and vegetable mixture.
If using, sprinkle shredded cheddar cheese on top.
Bake in the preheated oven for 20-25 minutes, until the top is golden and the filling is bubbly.
Let cool slightly before serving.
Notes
For a richer flavor, use ground lamb.
You can substitute fresh vegetables for frozen ones if desired.
