  • 2 boneless, skinless chicken breasts
  • 8 oz pasta (penne or spaghetti)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup fresh basil (chopped)
  • 2 garlic cloves (minced)
  • 2 tbsp olive oil
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  • Cook pasta according to package instructions. Drain and set aside.
  • Season chicken breasts with salt and pepper. Heat 1 tbsp olive oil in a skillet and cook the chicken until golden brown and fully cooked. Remove and slice.
  • In the same skillet, add 1 tbsp olive oil, garlic, and cherry tomatoes. Cook until tomatoes soften.
  • Stir in balsamic vinegar, then add the cooked pasta and chicken. Toss to combine.
