2 boneless, skinless chicken breasts
8 oz pasta (penne or spaghetti)
1 cup cherry tomatoes (halved)
1/4 cup fresh basil (chopped)
2 garlic cloves (minced)
2 tbsp olive oil
1/4 cup grated Parmesan cheese
1 tbsp balsamic vinegar
Salt and pepper to taste
Instructions
Cook pasta according to package instructions. Drain and set aside.
Season chicken breasts with salt and pepper. Heat 1 tbsp olive oil in a skillet and cook the chicken until golden brown and fully cooked. Remove and slice.
In the same skillet, add 1 tbsp olive oil, garlic, and cherry tomatoes. Cook until tomatoes soften.
Stir in balsamic vinegar, then add the cooked pasta and chicken. Toss to combine.
Garnish with fresh basil and Parmesan cheese before serving.
