Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Vegetable oil (for frying)
  • 4 brioche buns (toasted)
  • Lettuce, pickles, and mayo (for serving)

Instructions

  • Pound chicken breasts to an even thickness. Season with salt and pepper, then soak in buttermilk for at least 30 minutes.
  • In a shallow dish, mix flour, cornstarch, paprika, garlic powder, onion powder, salt, and pepper.
  • Heat oil in a large skillet to 350°F (175°C).
  • Remove chicken from buttermilk and dredge in the flour mixture, pressing to adhere.
  • Fry chicken breasts for 4-5 minutes per side until golden brown and crispy. Drain on a wire rack or paper towels.
  • Assemble the sandwich: spread mayo on toasted brioche buns, add crispy chicken, lettuce, and pickles. Serve hot.

Notes

  • For extra flavor, add a dash of hot sauce to the buttermilk marinade.
  • Use panko breadcrumbs for an even crunchier coating.
  • You can bake the chicken at 400°F (200°C) for 25 minutes if you prefer a healthier version.
