  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 can (13.5 oz) coconut milk
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp lime juice
  • Fresh cilantro, for garnish

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Season the chicken with salt and pepper and cook for 5-6 minutes per side until browned. Remove from skillet and set aside.
  • In the same skillet, add chopped onions and sauté until translucent.
  • Stir in garlic and ginger, cooking for 1 minute.
  • Add curry powder, turmeric, and paprika, stirring to combine.
  • Pour in the coconut milk and bring to a simmer.
  • Return the chicken to the skillet and simmer for 10-12 minutes, until fully cooked and the sauce thickens.
  • Stir in lime juice, adjust seasoning, and garnish with fresh cilantro before serving.
