  • 4 boneless, skinless chicken breasts
  • 4 slices of ham
  • 4 slices of Swiss cheese
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup all-purpose flour
  • 2 large eggs
  • 2 tbsp milk
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  • Preheat oven to 375°F (190°C).
  • Pound chicken breasts to an even thickness.
  • Place a slice of ham and cheese on each chicken breast, then roll tightly and secure with toothpicks.
  • Prepare three bowls: one with flour, one with beaten eggs and milk, and one with breadcrumbs mixed with Parmesan.
  • Dredge each chicken roll in flour, dip in egg mixture, and coat in breadcrumbs.
  • Heat butter and olive oil in a skillet over medium heat, sear chicken rolls until golden, then transfer to a baking dish.
  • Bake for 20-25 minutes or until chicken is cooked through.
  • Meanwhile, prepare the sauce: combine heavy cream, chicken broth, Dijon mustard, garlic powder, salt, and pepper in a saucepan. Simmer until thickened.
  • Pour the sauce over baked chicken rolls and serve warm.

Notes

  • For added crunch, use panko breadcrumbs.
  • Substitute Gruyère for Swiss cheese for a deeper flavor.
  • Pair with a side of mashed potatoes or steamed vegetables for a complete meal.
