8 oz pasta (linguine or fettuccine)
2 salmon fillets
1 tbsp Cajun seasoning
1 tbsp olive oil
2 tbsp butter
3 cloves garlic, minced
1 cup heavy cream
½ cup grated Parmesan cheese
½ cup cherry tomatoes, halved
1 cup spinach (optional)
½ tsp red pepper flakes (optional)
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Cook the pasta according to package instructions; drain and set aside.
Season the salmon fillets with Cajun seasoning.
Heat olive oil in a pan over medium heat and cook the salmon for 3-4 minutes per side until golden brown. Remove and set aside.
In the same pan, melt butter and sauté garlic until fragrant.
Add heavy cream, Parmesan cheese, cherry tomatoes, spinach, red pepper flakes, salt, and pepper. Stir and simmer until creamy.
Flake the cooked salmon into chunks and add it to the sauce.
Toss in the cooked pasta and mix well.
Garnish with fresh parsley and serve hot.
Notes
Adjust Cajun seasoning to your spice preference.
Substitute heavy cream with half-and-half for a lighter version.
