This crack chicken recipe is an addictive blend of creamy ranch, cheddar cheese, and crispy bacon mixed with tender chicken. A perfect low-carb, keto-friendly meal, it’s rich, flavorful, and ready in under 30 minutes. This versatile dish works well in sandwiches, wraps, or served over veggies for a hearty, crowd-pleasing dinner.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 packet (1 oz) ranch seasoning mix
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 2 tbsp chopped green onions (optional)
  • Salt and pepper, to taste

Instructions

  • In a slow cooker or large skillet over medium heat, add the chicken breasts. Sprinkle the ranch seasoning over the chicken.
  • Top with cream cheese and cover. If using a slow cooker, cook on low for 4-6 hours, or if using a skillet, cook for 20-25 minutes, flipping halfway.
  • Once the chicken is fully cooked, shred it with two forks directly in the pot or skillet.
  • Stir in cheddar cheese and bacon, cooking for another 2-3 minutes until everything is well combined and the cheese is melted.
  • Garnish with chopped green onions before serving, if desired.

Notes

  • This dish can also be made in an Instant Pot for quicker results.
  • Serve with lettuce wraps, over cauliflower rice, or as a filling for sandwiches.
