  • 1/2 pound chicken tenders
  • 32 ounces low sodium chicken stock
  • 1/2 cup mayonnaise
  • 2 tablespoons finely minced celery
  • 2 teaspoons dry Ranch salad dressing mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  • In a pot, bring the chicken stock to a boil.
  • Add the chicken tenders and cook until tender, about 15-20 minutes.
  • Remove chicken from the stock and let cool. Once cooled, shred the chicken.
  • In a mixing bowl, combine mayonnaise, minced celery, Ranch dressing mix, salt, and black pepper.
  • Add the shredded chicken to the bowl and mix until well combined.
  • Chill in the refrigerator for at least 1 hour before serving.
