This Chicken Quesadillas recipe features juicy, seasoned chicken breasts, colorful bell peppers, and melted Monterey Jack cheese, all wrapped in a crispy flour tortilla. Perfect for a quick and flavorful meal.

Ingredients

  • 2 medium chicken breasts, pounded to ½ inch thick
  • 2 teaspoons chicken taco seasoning
  • Olive oil
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 medium yellow onion, thinly sliced
  • 3 to 4 cups freshly shredded Monterey Jack cheese
  • 6 large flour tortillas
  • 4 tablespoons unsalted butter
  • Salt and pepper to taste

Instructions

  • Season chicken breasts with chicken taco seasoning.
  • Heat olive oil in a skillet over medium-high heat. Cook chicken breasts until fully cooked, about 6-7 minutes per side. Remove from skillet and slice thinly.
  • In the same skillet, sauté bell peppers and onion until tender, about 5 minutes. Remove from heat.
  • Lay tortillas flat and evenly distribute shredded cheese, sliced chicken, and sautéed vegetables on one half of each tortilla. Fold the other half over to cover.
  • In a clean skillet, melt butter over medium heat. Cook quesadillas until golden brown and cheese is melted, about 2-3 minutes per side.
  • Cut into wedges and serve warm.

Notes

  • Use pre-cooked rotisserie chicken for a quicker version.
  • Customize with your favorite veggies or add some jalapeños for extra spice.
