This Chicken Cordon Bleu Meatloaf recipe combines tender ground chicken, ham, and Swiss cheese for a flavorful and hearty meal. Topped with breadcrumbs and baked to perfection, it's a creative twist on the classic dish.

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup milk
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 6 slices of deli ham
  • 6 slices of Swiss cheese
  • 1/4 cup Dijon mustard (optional, for glaze)
  • 1/4 cup honey (optional, for glaze)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, egg, milk, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Press half of the chicken mixture into the prepared loaf pan.
  4. Layer the ham and Swiss cheese over the chicken mixture.
  5. Cover with the remaining chicken mixture and smooth out the top.
  6. If using a glaze, mix Dijon mustard and honey in a small bowl and brush over the top of the meatloaf.
  7. Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
  8. Let rest for 5 minutes before slicing and serving.

Notes

  • For a crispier topping, broil the meatloaf for 2-3 minutes after baking.
  • You can substitute cheddar cheese or provolone if desired.
  • Serve with mashed potatoes or a side salad for a complete meal.
