  • Meatloaf Mixture:
    • 2 lbs lean ground beef
    • 30 Ritz crackers, crushed
    • 2 oz Lipton onion soup mix
    • 2 large eggs
  • Sauce:
    • 1 cup ketchup
    • 1 cup Sweet Baby Ray’s Hickory & Brown Sugar barbecue sauce
  • Topping:
    • 24 oz frozen tater tots
    • 2 cups shredded mozzarella and cheddar cheese blend
    • 1/4 cup real bacon bits

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large bowl, combine ground beef, crushed Ritz crackers, Lipton onion soup mix, and eggs. Mix well.
  • Press the meatloaf mixture into a greased baking dish.
  • In a separate bowl, mix ketchup and barbecue sauce. Spread evenly over the meatloaf mixture.
  • Arrange tater tots on top of the sauce layer.
  • Bake in the preheated oven for 45 minutes.
  • Remove from oven and sprinkle shredded cheese and bacon bits over the tater tots.
  • Return to oven and bake for an additional 15 minutes, or until cheese is melted and bubbly.
  • Let cool slightly before serving.
