  • 1-2 Tablespoons butter
  • 1 diced onion
  • 2 medium diced carrots
  • 3 minced garlic cloves
  • 4 cups chicken stock
  • ¼ cup cornstarch
  • 1 cup milk
  • 2 large peeled and chopped potatoes (½-inch cubes)
  • 16 oz broccoli florets (fresh or frozen)
  • 1½ cups shredded sharp cheddar cheese
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper

Instructions

  • In a large pot, melt butter over medium heat. Add diced onion and carrots, sauté until softened.
  • Stir in minced garlic and cook for another minute.
  • Pour in chicken stock, add potatoes, and bring to a boil. Reduce heat and simmer until potatoes are tender.
  • In a small bowl, whisk cornstarch into milk, then stir into the soup.
  • Add broccoli and cook until tender.
  • Stir in cheddar cheese until melted and smooth.
  • Season with salt and pepper to taste. Serve warm.
