  • 1 tablespoon olive oil
  • 2 cups chopped vegetables (red onion, bell pepper, mushrooms, or broccoli)
  • 1 pound breakfast sausage or Italian sausage (removed from casings)
  • 8 eggs
  • 2 pinches salt (to taste)
  • 2 teaspoons unsalted butter
  • 8 burrito size tortillas
  • 2 cups shredded cheddar cheese (or Monterey jack, pepper jack, or a combination)

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add chopped vegetables and cook until tender, about 5 minutes.
  • Add sausage to the skillet, breaking it apart as it cooks. Cook until browned, about 7 minutes.
  • In a separate bowl, whisk eggs with a pinch of salt.
  • Push the sausage and vegetables to one side of the skillet, and melt the butter on the empty side.
  • Pour in the eggs and scramble until cooked through, then mix with sausage and vegetables.
  • Warm tortillas in the microwave or on a stovetop.
  • Divide the sausage and egg mixture among the tortillas, sprinkle with cheese, and roll into burritos.
