  • 2 large chicken breasts, cubed
  • 4 slices of bacon, chopped
  • 3 large egg yolks
  • 1 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the spaghetti in salted boiling water according to package instructions. Reserve 1 cup of pasta water before draining.
  2. Heat olive oil in a large skillet over medium heat. Cook the cubed chicken until golden and cooked through. Remove and set aside.
  3. In the same skillet, cook the bacon until crispy. Add minced garlic and sauté for 1 minute.
  4. In a bowl, whisk together egg yolks, Parmesan cheese, and heavy cream. Gradually add reserved pasta water to create a smooth sauce.
  5. Add spaghetti to the skillet with bacon and garlic. Pour the sauce over the pasta and toss to coat evenly.
  6. Add cooked chicken and stir gently over low heat for 1-2 minutes until the sauce thickens slightly.
  7. Season with salt and black pepper to taste. Garnish with fresh parsley and extra Parmesan cheese before serving.
