This Beet Pasta Sauce Recipe is a vibrant, creamy, and healthy alternative to traditional sauces. Ingredients

  • 2 medium beets, roasted and peeled

  • 2 cloves garlic, roasted

  • 1/2 cup heavy cream or coconut cream

  • 1/4 cup grated Parmesan (optional for vegan)

  • 1 tbsp olive oil

  • Salt and pepper to taste

  • 1/2 tsp lemon juice

  • 1/4 tsp chili flakes (optional)

  • 8 oz pasta of choice

Instructions

  • Roast the beets and garlic until tender, about 35–40 minutes at 400°F.

  • Let cool, then peel and chop the beets.

  • In a blender, combine roasted beets, garlic, cream, Parmesan, olive oil, lemon juice, salt, pepper, and chili flakes. Blend until smooth.

  • Cook pasta according to package instructions.

  • Drain and toss pasta with beet sauce over low heat until warmed through.

 

  • Serve with extra Parmesan or herbs if desired.

Notes

  • Use coconut cream and omit cheese for a vegan version.

  • Add more cream or pasta water for a thinner sauce.

 

  • Works great as a pink sauce base or for stuffed pastas.
