2 medium beets, roasted and peeled
2 cloves garlic, roasted
1/2 cup heavy cream or coconut cream
1/4 cup grated Parmesan (optional for vegan)
1 tbsp olive oil
Salt and pepper to taste
1/2 tsp lemon juice
1/4 tsp chili flakes (optional)
8 oz pasta of choice
Roast the beets and garlic until tender, about 35–40 minutes at 400°F.
Let cool, then peel and chop the beets.
