  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup diced onions
  • 10 flour or corn tortillas
  • 2 cups shredded cheddar or Mexican blend cheese
  • 2 cups red enchilada sauce
  • 1 can black beans (optional)
  • 1 cup sour cream (for garnish)
  • Fresh cilantro (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook ground beef and diced onions in a skillet over medium heat until fully browned. Add taco seasoning and mix well.
  3. Warm tortillas slightly to make them pliable.
  4. Spread a spoonful of enchilada sauce on each tortilla, then add beef mixture and a sprinkle of cheese. Roll tightly.
  5. Place rolled tortillas seam-side down in a greased baking dish.
  6. Pour remaining enchilada sauce over the tortillas and sprinkle with the rest of the cheese.
