1 packet taco seasoning
1 cup diced onions
10 flour or corn tortillas
2 cups shredded cheddar or Mexican blend cheese
2 cups red enchilada sauce
1 can black beans (optional)
1 cup sour cream (for garnish)
Fresh cilantro (for garnish)
Instructions
Preheat the oven to 375°F (190°C).
Cook ground beef and diced onions in a skillet over medium heat until fully browned. Add taco seasoning and mix well.
Warm tortillas slightly to make them pliable.
Spread a spoonful of enchilada sauce on each tortilla, then add beef mixture and a sprinkle of cheese. Roll tightly.
Place rolled tortillas seam-side down in a greased baking dish.
Pour remaining enchilada sauce over the tortillas and sprinkle with the rest of the cheese.
