  • 2 teaspoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 large bell pepper, any color, diced
  • 1 pound ground beef
  • 1 (15 ounce) can chili beans
  • Salt and pepper to taste
  • 1 teaspoon ground cumin
  • 1 (15 ounce) can red enchilada sauce, divided
  • 12 corn tortillas
  • 12 ounces Mexican blend shredded cheese
  • Cilantro, for garnish (optional)
  • Sour cream, for garnish (optional)

Instructions

  • Preheat oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, sauté until softened.
  • Add diced bell pepper and cook for 3-4 minutes.
  • Add ground beef and cook until browned. Drain excess fat.
  • Stir in chili beans, salt, pepper, and ground cumin.
  • Pour half of the enchilada sauce into the beef mixture and stir well.
  • Spread a thin layer of the remaining enchilada sauce in a baking dish.
  • Layer 6 corn tortillas over the sauce, followed by half of the beef mixture, and half of the shredded cheese.
  • Repeat the layers with the remaining tortillas, beef mixture, and cheese.
  • Pour the remaining enchilada sauce over the top layer.
  • Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, until cheese is melted and bubbly.
  • Garnish with cilantro and sour cream, if desired. Serve hot.

Notes

  • You can use any color bell pepper.
  • Adjust seasoning to taste.
  • Leftovers can be stored in the refrigerator for up to 3 days.
