  • 3 large eggs

  • 1 ½ tsp baking soda
  • 1 ½ tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • 1 cup semi-sweet chocolate chips (optional)

Instructions

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, mash the ripe bananas until smooth.
  • Add vegetable oil, eggs, and vanilla to the mashed bananas and mix well.
  • In a separate bowl, whisk together flour, sugar, baking soda, baking powder, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
