2 pounds fresh apricots, halved and pits removed
1 Tbsp lemon juice
1/2 cup butter, softened to room temperature
3/4 cup sugar
1 tsp vanilla extract
4 large eggs
2 cups all-purpose flour
3 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
2 Tbsp powdered sugar for serving
Instructions
Preheat oven to 350°F (175°C).
Toss apricots with lemon juice and set aside.
Cream butter and sugar until fluffy. Add vanilla extract.
Beat in eggs one at a time.
In a separate bowl, mix flour, baking powder, salt, and cinnamon.
Gradually add dry ingredients to the wet mixture.
Pour batter into a greased cake pan.
Arrange apricots on top, pressing slightly into the batter.
Bake for 40-45 minutes or until a toothpick comes out clean.
Cool and sprinkle with powdered sugar before serving.
