  • 2 pounds fresh apricots, halved and pits removed
  • 1 Tbsp lemon juice
  • 1/2 cup butter, softened to room temperature
  • 3/4 cup sugar
  • 1 tsp vanilla extract
  • 4 large eggs
  • 2 cups all-purpose flour
  • 3 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 2 Tbsp powdered sugar for serving

Instructions

  • Preheat oven to 350°F (175°C).
  • Toss apricots with lemon juice and set aside.
  • Cream butter and sugar until fluffy. Add vanilla extract.
  • Beat in eggs one at a time.
  • In a separate bowl, mix flour, baking powder, salt, and cinnamon.
  • Gradually add dry ingredients to the wet mixture.
  • Pour batter into a greased cake pan.
  • Arrange apricots on top, pressing slightly into the batter.
  • Bake for 40-45 minutes or until a toothpick comes out clean.
  • Cool and sprinkle with powdered sugar before serving.
